how much wood?
Too many variables. It depends on you choice of wood and the type and size of canoe or kayak you build. A first build can take 500 hours whereas after a few boats you get that down to about 150 h...

You could score the wood then fill it in with thickened, colored epoxy. You can also print them on tracing paper and place beneath the fiberglass.

first timers questions
Pre-installing a thicker runner strip will cause problems when you glass the inner hull as the glass won't lay flat against the hull. It will lift away and you will have a weak structure with air...
