KENTUCKY RECIPES!

 

 

CAKES:

 SOUTHERN PECAN CHEESECAKE


Ingredients:
3/4 c   Ginger flavored cookie
          -crumbs
    1/3 c   Finely chopped pecans
      5 tb Butter, melted
      3 tb Brown sugar


Directions:

CRUST: Combine ingredients and press into bottom of 10-inch springform pan.
 
  FILLING: 1/3 cup firmly packed brown sugar 2 Tablespoons flour 1 Tablespoon
  butter 1 cup finely chopped pecans Blend ingredients together and set
  aside.
 
  CAKE: 4 8 ozs. packages cream cheese 3/4 cup firmly packed brown sugar 2
  Tablespoons cornstarch 6 eggs 1/2 cup sour cream 1/4 cup bourbon  
  temperature to 225 degrees and bake about 45 minutes longer. Cool and refrigerate.
 
  BOURBON SAUCE: 1/4 cup butter 2/3 cup firmly packed brown sugar 1/4 cup heavy cream 1/4 cup bourbon.
    Melt butter. Add sugar and stir until dissolved. Add cream and bourbon and
  simmer 5 minutes. Spread over cold cheesecake.

Gramma Ruth's Kentucky Stack Cake

Description:
This is an old family cake we still love.
Kentucky Stack Cake was used as a wedding cake.
Invited wedding guests each brought a thin layer of cake as a gift to the bride. Applesause made from fresh or dried apples was used as filling when the cake was assembled for eating.
The more stacks the better thought of the bride and her family by their family and neighbors.

 

Ingredients:
1 cup butter
1 cup sugar
1 cup molasses
1 teaspoon soda
3 eggs
1 cup milk
4 cups flour
1 teaspoon salt
Filling: Homemade Applesauce.


Directions:
Cream butter and sugar together, add molasses.
Add eggs-beat well.
Add milk-alternating with sifted dry ingredients.
Pour mixture about 1/2 inch deep into 6 greased layer pans.
Bake at 375 in pre-heated oven for about 20 minutes.
Let cool-when cool add your applesauce between layers.
We always let our Stack Cake sit over night after adding the filling-it just tasted better!


Number Of Servings:6-12-very filling!

SIDE DISHES!

 Southern Black-Eyed Peas

Description:
Traditional Southern Recipe.
Delicious.


Ingredients:
1/2 pound Apple-smoked Bacon.
1 Sweet Onion, chopped.
3 Cloves of Garlic, minced.
14 ounces of Chicken Stock.
11 ounces of Fresh Black-eyed Peas.
3-4 tablespoons of Fresh Rosemary, chopped.
Salt and Pepper.

 

Directions:
In a large saucepan, saute bacon until limp . Add onion and garlic and continue to saute. Add chicken stock, peas, rosemary and salt and pepper to taste. Simmer for about 20 minutes.


Number Of Servings:~6-8~

Chicken Breasts with Corn Bread Dressing
 
Ingredients:
1 Tbsp (15mL)Mrs. Dash® Original Blend
1 Tbsp (15mL)Mrs. Dash® Chicken Grilling Blend™
1 Tbsp (15mL) fresh parsley
4 4 Oz. (120g) boneless, skinless chicken breasts
1 Tbsp (15mL) unsalted butter or margarine
1 cup (240mL) chopped celery
1/2 cup (120mL) chopped onion
1 1/2 tsp (7mL) Mrs. Dash® Original Blend
2 tsp (10mL) ground sage
2 cups/7 Oz. (480mL) coarsely crumbled corn bread
2 cups (480mL) unseasoned croutons
1 cup (240mL)fat-free low sodium chicken broth

Instructions:
1. Chop parsley.
2. Combine Mrs. Dash® Original Blend, Mrs. Dash® Chicken Grilling Blend™, parsley, mix lightly.
3. Coat chicken breasts on both sides with seasoning blend mixture.
4. Spray large non-stick skillet with non-stick cooking spray. Heat skillet over medium heat until hot.
5. Add chicken breasts to skillet, cook 3 to 5 minutes on each side or until lightly brown. Remove chicken breasts from skillet, set aside.
6. Preheat oven to 350°F (180°C).
7. Melt butter in skillet over low heat.
8. Add celery, onion, Mrs. Dash® Original Blend, sage, mixing to blend.
9. Cook over medium heat 5 to 7 minutes or until vegetables are crisp tender. Remove from heat.
10. Combine cornbread crumbs and croutons in mixing bowl.
11. Add vegetable mixture and broth, mixing to blend.
12. Spoon dressing mixture to 2 1/2 Qt. (3L) baking dish lightly sprayed with non-stick cooking spray. Arrange chicken breasts on top of dressing mixture.
13. Cover, bake at 350°F (180°C) 45 minutes.
14. Remove cover, continue baking 5 to 10 minutes or until chicken breast registers internal temperature of 170°F (80°C).
15. Garnish with celery leaves, if desired.

Serves: 4
